With strength weapons I reccomend one of 2: if one handing then Man Serpent Greatsword, if two handing then Great Club. You will hit like a truck with the club. At 40 endurance and the 2 rings above you can medium roll with full giants, the great club, and the greatshield of Artorias (which is the best shield for its weight.

The Gargoyle Halberd is a fantastic weapon for nearly any build requiring low stats and having decent scaling. Excellent for being buffed or turned into a magic based (enchanted/divine) weapon.
